- Ricotta and spinach ravioli with butter and sage
With panoramic views of Lucca's magnificent towers, we prepare a menu with three different fresh pasta formats that are part of the area's culinary tradition using local products.
We start with very fresh flour and eggs to roll out the pasta sheet with a rolling pin and make pasta stuffed with ricotta and spinach and maltagliati pasta served with meat sauce. Potatoes and flour are the ingredients of the third recipe.

- Novella was incredible and we had the best time learning to make pasta with her and Marco. Her apartment was beautiful and she made us feel right at home and the dishes we made were delicious. It was the highlight of our trip and we could not recommend her enough!

- What an amazing experience! Maria and Marco where the nicest people, Marco, the interpreter was able to help us fill the gaps in the language barrier. We did the 3 pasta class, ravioli, gnocchi and meat ragu, it all turned out great. I would recommend this to anyone, no matter their cooking background. Maria was very knowledgeable on the traditional Italian pasta making techniques.
- We had a wonderful experience with Novella and her family. She was extremely knowledgeable and patient with us. We made several dishes, including Tiramisu. We thoroughly enjoyed ourselves. It was such a great learning experience and I know we will use the recipes in the future. A very worthwhile experience. Many thanks to Novella, her family and to Marco as well. We had a wonderful evening.

From the Lucca cuisine, I love to prepare tordelli with ragù and various soups, from frantoiana to ribollita to pappa al pomodoro, all seasoned with the excellent oil from our hills. The appetizer is always rustic, with excellent unsalted "sciocco" bread bruschetta and Colonnata lard, Igp Sorana beans, black cabbage, and the inevitable chicken livers. To finish sweetly, almond cantucci and grandmother's cream cake.
