I love blending traditional recipes with something new, always respecting the scents and flavors of our beautiful land. Each thing we will prepare together and enjoy has its own story, which I will tell you in detail. Sicilian almond pesto, for example, a traditional Sicilian recipe for an excellent first course, is enhanced by other scents and flavors of our land.

Pasta with ricotta cheese, another traditional first course from Catania, is enriched with "'nduja," a typical Calabrian salami that is increasingly becoming part of Sicilian cuisine as well. The "tiramisu," a dessert that is now part of all Italian traditions, will have a Sicilian touch given by the wine "marsala." These dishes will be preceded by several samplings of Sicilian flavors.

Our evening with Maurizio and his charming sister exceeded our expectations.From the appetizers through dessert, all of the dishes were incredible. We enjoyed learning to make pasta, tiramisu and pork cutlets under the supervision of this entertaining brother and sister team. To top off the evening, Mauricio treated us by sharing his musical talent, playing our favorite Billy Joel hits on the piano. Our evening hosted by Maurizio will definitely be remembered as a highlight of our time in Catania.

I highly recommend doing this, it was so much fun. When we arrived at Chef Maurizio’s house there was a table full of antipasto and refreshments waiting for us. Did not take long for Chef Maurizio and his lovely sister to put us to work making the pasta. That’s when the fun started, there were eggshells in the dough and they started bickering, like siblings do, on who was at fault, this was so funny. I over soaked the lady finger for the tiramisu on purpose so I could get in on the bickering :) It really felt like I was at home cooking with my family. They had us laughing, slicing, dicing and drinking throughout the day. Everybody participated in the cooking and laughing. So be prepared to work and eat. But the memories will remain forever!

This was so much fun making authentic Italian in the chefs kitchen. Not only did we leave full and happy, but the setting was absolutely beautiful. I have to say I loved the chef, but the highlight for me was the chef’s sister. An amazing cook in her own right, and though she didn’t speak a word if English, my group had no problem deciphering her playful banter with the chef. Amazing experience. Don’t pass it up.

My main expertise lies in pasta dishes, but I don't underestimate the importance of velvety soups and meat and fish entrees. My culinary creations draw inspiration from traditional Sicilian and Calabrian recipes, reinterpreted with a modern twist. I prefer using local ingredients, so-called "zero kilometer" products, to create a unique harmony that enhances the authentic colors, fragrances, and flavors of our region. I invite you to try a pasta dish seasoned with my almond and basil pesto, or an intriguing pistachio and sun-dried tomato pesto. I also offer delightful options made with red tuna and mint; pork or beef fillet enriched with vintage vinegar and white onion cream; potato meatloaf embellished with red tuna and capers. And to sweetly conclude, I propose traditional desserts made with ricotta or pistachio cream, among many other delicacies.
