I am Rosa Maria, your Cesarina in Palermo. I will guide you to discover the scents and flavors of Palermo and Sicily. One lesson I learned from my family is never to give up on fried food. In Palermo, fried food is a true delight, and in my menu, I offer it as an appetizer: from "panelle" to "arancinette," vegetables in batter, and eggplant cutlets.
Afterwards, we will dive into making "cavatelli," a typical Sicilian fresh pasta, which I will dress with a delicious sausage and fresh or aged ricotta ragù. To conclude, I will let you savor a lemon cream, a dessert that will cleanse the palate from all the intense flavors we have enjoyed. I look forward to welcoming you for an authentic culinary experience with me in Palermo.

- This was an amazing experience! She opens up her beautiful home to do the cooking classes. Unfortunately I don’t remember the name of the lady that was also helping us, but she is amazing also. Learning a little about how she makes the pasta and the Tiramisu was so much fun. Afterwards, her husband joined us, also a lot of fun to talk with and we all sat down at a wonderful table and ate. Everyone should experience her class. 💜
