I am Rosa Maria, your Cesarina in Palermo. I will guide you to discover the scents and flavors of Palermo and Sicily. One lesson I learned from my family is never to give up on fried food. In Palermo, fried food is a true delight, and in my menu, I offer it as an appetizer: from "panelle" to "arancinette," vegetables in batter, and eggplant cutlets.

Afterwards, we will dive into making "cavatelli," a typical Sicilian fresh pasta, which I will dress with a delicious sausage and fresh or aged ricotta ragù. To conclude, I will let you savor a lemon cream, a dessert that will cleanse the palate from all the intense flavors we have enjoyed. I look forward to welcoming you for an authentic culinary experience with me in Palermo.

This was an amazing experience! She opens up her beautiful home to do the cooking classes. Unfortunately I don’t remember the name of the lady that was also helping us, but she is amazing also. Learning a little about how she makes the pasta and the Tiramisu was so much fun. Afterwards, her husband joined us, also a lot of fun to talk with and we all sat down at a wonderful table and ate. Everyone should experience her class. 💜
